Here’s when it gets dangerous

If the garlic you bought has been sitting at home for a while, it’s probably time to throw it away. Spoiled garlic can cause serious health consequences

The strong and characteristic taste of garlic is not for everyone, but it is hard to find a kitchen that can do without it. For many people, garlic is the ingredient that gives food depth and identity. However, it has one major drawback: it does not age well.

This is also emphasized by Art Smith, cookbook author and former personal chef of Oprah Winfrey and Michelle Obama. According to him, the rule is simple: use only fresh garlic, or don’t use it at all.

An unpeeled head of garlic, if stored properly, can last up to 6 months.

Special unpeeled cloves usually last 2–3 weeks, depending on freshness at the time of purchase.

How do you know if the garlic is still good?

Appearance
Fresh garlic is white or cream-white in color. Yellow or brown spots on peeled stalks may indicate aging or decay. The presence of mold is a clear signal to throw it away immediately.

The smell
Fresh garlic has a strong and pungent flavor. If the smell is weak, sour or ammonia-like, it is no longer safe for consumption.

Texture
The stems must be strong. If they are soft, dry or mushy, the garlic is spoiled.

Garlic sprouts can be used, but the sprouts must be removed, as they are bitter. This garlic has a stronger flavor and is more suitable for long-simmering dishes; for live use, completely fresh garlic is always preferred.

Why can rotten garlic be dangerous?

Rotten garlic should not be consumed even in small quantities because it can cause botulism, a rare but very serious disease.

Botulism is caused by the bacterium Clostridium botulinum, which produces toxins that attack the nervous system. Consequences can include:

Experts advise buying only the amount you really need. If you have more, follow these basic rules:

Keep in a dry, dark and well-ventilated place

Do not store garlic in the refrigerator – moisture and cold promote germination, rotting and loss of flavor

Peeled garlic can be kept in the refrigerator, but only for 2-3 days, in a hermetically sealed container.

Freezing slightly changes the texture and with time reduces the intensity of the taste, but the garlic remains suitable for cooking.
Minced garlic can also be frozen, ideally in portions (silicone forms are very practical).

Do not store garlic in oil, water or vinegar, especially at room temperature. This environment favors the development of Clostridium botulinum and increases the risk of botulism.

If you prepare garlic-flavored oil, it must be stored in the refrigerator and consumed within a very short time.

Remember: Garlic is healthy and irreplaceable in the kitchen, but only when it is fresh and stored properly. If you have doubts about its quality, it is better to throw it away than to risk your health.

Source: prizrenpost

How long can garlic stay at home?
